January 10 – Greece: Pita, Souvlaki, Tzatziki, Salad

Tzatziki

  • 300 g Greek yogurt
  • 1 cucumber (grated and most of the moisture removed)
  • 2 cloves of garlic
  • 1 tbsp white wine vinegar
  • 1 tsp dill
  • 3 tbsp olive oil
  • Pinch of salt
  • Pinch of black pepper

Pita Dough

  • 160 ml whole milk, at room temperature
  • 80 ml water
  • 1 tsp sugar
  • 2 tbsp olive oil
  • 2 tsp active dry yeast
  • 320 g ’00’ flour
  • 1 tsp salt
  • 1 tsp thyme or oregano

Pork Souvlaki

  • 500 g pork shoulder
  • 1 tbsp white wine vinegar
  • 1 tsp salt
  • ¼ tsp allspice (piment)
  • 1 tsp cumin
  • 1 tsp black pepper
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp thyme
  • 1 tbsp oregano

Salad

  • Cucumber, sliced
  • Tomato, chopped
  • Fresh coriander, chopped
  • Red onion, thinly sliced
  • Olive oil for dressing
  • Salt to taste
  • Pepper to taste
