January 11: Hungary – Gulyás

Ingredients:

• 800 g beef shin or chuck, cut into large cubes

• 2 large yellow onions, finely chopped

• 3 tbsp lard or sunflower oil

• 3 tbsp sweet Hungarian paprika (édes nemes)

• 1 tsp caraway seeds, lightly crushed

• 2 cloves garlic, minced

• 2 medium carrots, sliced

• 2 medium parsnips (or root parsley), sliced

• 2 medium potatoes, diced

• 1 green bell pepper, chopped

• 1 tomato, chopped (or 2 tbsp tomato purée, optional but traditional)

• 1 tsp salt, then adjust

• ½ tsp black pepper

• Water or light beef stock
