Tzatziki
- 300 g Greek yogurt
- 1 cucumber (grated and most of the moisture removed)
- 2 cloves of garlic
- 1 tbsp white wine vinegar
- 1 tsp dill
- 3 tbsp olive oil
- Pinch of salt
- Pinch of black pepper
Pita Dough
- 160 ml whole milk, at room temperature
- 80 ml water
- 1 tsp sugar
- 2 tbsp olive oil
- 2 tsp active dry yeast
- 320 g ’00’ flour
- 1 tsp salt
- 1 tsp thyme or oregano
Pork Souvlaki
- 500 g pork shoulder
- 1 tbsp white wine vinegar
- 1 tsp salt
- ¼ tsp allspice (piment)
- 1 tsp cumin
- 1 tsp black pepper
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp thyme
- 1 tbsp oregano
Salad
- Cucumber, sliced
- Tomato, chopped
- Fresh coriander, chopped
- Red onion, thinly sliced
- Olive oil for dressing
- Salt to taste
- Pepper to taste
